AIB International hosts baking process kill step calculator with application & interpretation webinar

AIB International announced today it will host a free webinar, baking process kill step calculator: application & interpretation.

Targeted to facilities seeking expert advice on how to interpret and disseminate the calculator results, the webinar will include a live Q&A session with Dr Kantha Channaiah, the expert behind the calculators.

New regulatory requirements call for each FDA-registered food manufacturing facility to scientifically demonstrate and document evidence of the kill step in baked goods production, as a result, AIB International entered a needs evaluation with partners from American Bakers Association and its Food Technical and Regulatory Affairs Committee, and researchers at Kansas State University and the University of Georgia. The results generated the development of Baking Process Kill Step Calculators for various baked products.
