From 18 to 21 October 2014, DeutscheBack GmbH & Co. KG will present its latest product range for bakeries at Südback in Stuttgart.
The special features will include TopBake Easy Rye and TopBake Yoghurt-Malt-Multigrain, both of which ensure full flavour in small country-style products. The TopSweet range, extended to include compounds for quark balls and quark fillings, will also be presented. In addition, DeutscheBack’s sister company OlbrichtArom will show various vanilla flavourings on the joint exhibition stand (Stand 5C68).
As an expert for baking ingredients, baking premixes and baking concentrates, DeutscheBack will be presenting its range of products at Südback from 18 to 21 October 2014. Under the motto “as much as necessary, as little as possible”, the focus of the company’s presentation in Stuttgart will be on its latest baking concentrates.
These include TopBake Easy Rye, a flexible ten-percent product consisting of equal parts of wheat and rye flour for all types of small baked goods. It can be used for making over-fermented baguettes as well as square rolls. TopBake Easy Rye gives the dough so much stability that even freezing is possible. Snacks based on TopBake Easy Rye are especially tasty: they can be shaped into rings incorporating cheese or ham or made up as a savoury combination of rye rolls baked with cheese on top.
The product is also ideal for rustic baguettes containing crisp fried onions.
New TopBake Yoghurt-Malt-Multigrain is a 50-percent premix consisting of oat, rye and spelt flakes supplemented with malt, yoghurt powder, sunflower seeds and linseeds. By mixing it with wheat flour, the baker can produce appetizing rolls with a succulent crumb. The seeds ensure bite, while the yoghurt gives the products a fresh flavour. The enzyme system is also designed to permit freezing and lends the dough stability and volume.
TopSweet Quark Balls 30% is a thirty-percent concentrate to which wheat or spelt flour, egg, water and oil are added. The dough has good machinability and a very smooth surface and ensures excellent results when baked.
TopSweet Quark Filling is the right choice for bland quark fillings with good freeze-thaw stability. Because of its high fat content the neutral-tasting paste can be used for filling cakes and small pastries, either as it is or with flavouring.
In addition to novelties, the company will present established products such as label-friendly TopBake WA Pure for better water binding and thus a more succulent crumb, and the “Fresh” series for prolonging the shelf-life of packaged bread and pastry goods. For gluten-free bread and cake, DeutscheBack offers gluten-free ingredients such as anti-staling enzymes and TopBake WA Pure Rice besides a range of 50 to 100 percent ready-mixed solutions.
At Südback, DeutscheBack will be exhibiting together with its sister company OlbrichtArom. The solutions the two companies offer bakers and confectioners complement each other and help to simplify processes and widen the range. OlbrichtArom is an expert in flavourings and citrus peel pastes; in Stuttgart it will present a number of flavourings including various natural vanilla varieties and lemon and orange peel pastes for enhancing baked goods. Flavour shots for café specialities ensure variety in the coffee business.
